“One of the hardest things to do is trust someone with your health. When I reached out to Beth, my health was so bad. I was ashamed and it was hard to be real. But I knew I needed the help. What I found was a person who not only knew with confidence what I needed to help turn my health around, but she truly cared. When I was questioning myself I would reach out and she reassured me. I feel like she is always lifting me and cheering me on. Her recipes have become staples in my day to day life. It was one of the best decisions I ever made.”

“When I found Off the Plate I was at my wit’s end. I had tried every diet imaginable. If I got lucky, I would lose some but then it would come back plus some. It was a constant struggle. Most of the time it didn’t work and I felt miserable and blamed myself. I even had one diet place tell me that it was my fault that I wasn’t losing the weight. They blamed me even though I was doing everything they said. That was probably the rock bottom for my self esteem. I had basically given up when a friend recommended I try looking into functional nutrition. Beth worked with me and my doctor. Together we figured out that my struggles were related to my body not functioning properly no matter how much I tried. Beth created a nutritious and delicious plan for eating for me. We also worked together to help me get past the guilt I had been feeling for so many years. I ended up starting tirzepatide and was able to keep it at a low dose, just enough to get my body working as it used to. Most importantly, Beth showed me how to get rid of the shame I felt around food and my body and celebrate me for me. Oh, and she also encouraged me to start gardening again! I had forgotten how much it made me happy and was a huge stress reliever. I look and feel like a new person!”

“I was diagnosed with NAFLD and I was devastated. I have two teenage sons and I want to be around for them. My doctor just said to eat right and exercise but I was already to doing both. My insurance didn’t cover much and I felt lost. I found Beth and she accepted me as one of her pro bono clients. She helped me change things in my diet and lifestyle to be more liver friendly. We also talked a lot about living for me. Once I learned to live for me, living for my sons was easy. I don’t know what I would have done without her help. There was so much information out there and everyone had an opinion about what I should be doing. Beth showed me how to work with my body but also my crazy schedule. Of course no one is going to tell you to go out and eat candy and fast food 24/7, but Beth helped me come up with a plan that I could do easily and didn’t have to think. The last time I went to the doctor I was down 25 lbs and my bloodwork was all normal. I can’t thank Beth enough for everything.

“When my friend recommended Off the Plate, I was already feeling good about my weight but I was struggling with having no energy and pretty bad digestive issues. My PCP said I had IBS-D. I tried a Low FODMAP diet on my own but it didn’t work and was almost impossible to follow. Beth met with me three times. During that time she had my doctor do some extra bloodwork. Turns out my ferritin levels were super low and I was overdoing it with magnesium. Beth suggested an iron supplement that was easy on the stomach, B-12, and cutting out my magnesium for a bit. By the third session, my energy was starting to improve and the digestive issues had stopped. She celebrated with me and didn’t pressure me to buy any more sessions. She still checks in on me even though I’m not paying her and she doesn’t have to. The solution to my problem turned out to be pretty simple, but without Beth I don’t think I would have figured it out. She really cares about me as a person not just a client.
